Lemon White Chocolate Chip Cookie

Lemon and white chocolate are a fantastic combination. My wife makes this lemon white chocolate chip cookie that is simply amazing. If heaven had a taste, I would imagine this is what it would taste like. Coming right out of the oven and taking that first bite while they are still warm. Oh man they are good.

If you are fond of white chocolate then you really need to try this recipe.

Ingredients:
1/2 cup of shortening
1/2 cup of butter
3/4 cup of white sugar
3/4 cup of packed brown sugar
1 (3.5 oz) package of Instant Lemon Pudding mix
2 eggs
2 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
12 oz package of white chips
*Optional: Add 1/2 cup chopped Macadamia nuts

Directions:
Preheat oven to 350 degrees.
In a large mixing bowl cream the shortening and butter with the white and brown sugars. Stir in the lemon pudding mix. Lightly beat the eggs then add them to the creamed mixture. Mix well. Sift the flour, baking soda and salt together. Add the flour mixture to the egg mixture. Mix until combined. Stir in the white chips. Drop teaspoonfuls of the dough onto un-greased cookie sheets about 2 inches apart.
Bake at 350 degrees for 10 to 12 min or until done.
