They may sound a little disgusting but if you love bacon and maple syrup then you will like these. I came up with these after having a maple glazed donut topped with bacon from my local donut shop.
Ingredients
1 package of your favorite bacon
Real Maple Syrup
Powder Sugar
2 1/4 cups flour
1 tsp baking soda
1 tsp salt
1/2 of shortening
1/2 cup of butter, softened
3/4 cup of packed brown sugar
3/4 cup of granulated sugar
1 tsp vanilla extract
2 eggs
Instructions
Preheat oven to 375 degrees
In a pan cook up your bacon the way you would normally fry bacon and set aside on a paper towel to drain. Chop the bacon up into small pieces and set aside for the moment.
In a small bowl combine flour, baking soda and salt. In a large bowl combine butter, shortening, both sugars and vanilla until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in about 3/4 of the amount of chopped bacon pieces into mix leaving 1/4 of the bacon pieces aside for later. Drop by rounded tablespoon onto a ungreased cookie sheet.
Bake for 9 to 11 minutes or until golden brown. Cool on baking sheet for a couple minutes then remove to wire racks to cool completely.
For the icing you will have to just eyeball it for the consistency you want. Start by adding about 4 tablespoons of maple syrup to a small bowl. Add 1/4 tsp of vanilla. With a spoon slowly add powder sugar and mix well. Keep adding powder sugar and mixing until you get the consistency you want.
Spread the maple syrup mixture over the tops of the cookies evenly. Top with the remaining bacon pieces. With your gently press on each cookie. This will help make the bacon pieces adhere to the maple glaze so they wont fall off.
Wait for the icing to harden a little if you can hold out then enjoy.
